Baked Mac and Cheese Cups

I am a macaroni and cheese girl through and through. There is just something about a big bowl of mac and cheese that instantly makes me feel better – hello comfort food! Given a choice of a fancy dinner or macaroni and cheese, I will always choose the latter.

True story: the very first thing I learned how to cook by myself was macaroni and cheese when I was six years old and you better believe that I ate it for a week straight.

Since football season is coming up and we are bound to attend some Sunday afternoon watch parties, I have updated my favorite homemade mac and cheese recipe to be perfect for when I am on the go or tailgating before a game.

The recipe is easy and makes about 12 servings of delicious and gooey mac and cheese.

Baked Mac and Cheese Cups

Ingredients:

1 lb of large elbow macaroni
2 lb of your favorite cheese, shredded (I use Colby Jack)
Small block of Velveeta Cheese
16 oz. Sour Cream
1 Stick Butter

Directions:
Heavily salt a large pot of water and bring to a boil
Add macaroni and cook as directed on package
Melt butter and Velveeta Cheese together, stirring constantly
Add sour cream to cheese mix with a wisk and keep warm – be careful to not let it burn to the pan
Drain macaroni and return to pot
Add cheese sauce to macaroni and mix well
Gradually add ¾ of the shredded cheese, mixing well
Pour macaroni and cheese into a baking dish and top with 1/3 shredded cheese
Bake at 350 until cheese on top is melted

Dish into a bowl or treat cup, garnish with a little extra cheese and a football pick, and enjoy!

I like keeping my baking dish in a Pyrex portable bag so the mac and cheese stays warm during the drive to the party. Then I use a large ice cream scoop to dish the mac and cheese into the treat cups.

With two nephews who play football, a best friend who is a football coach, and several other friends who enjoy watching Sunday football, it seems like everywhere I turn someone is talking about how excited they are for the return of football season.

Now, let’s be honest, I am really there for the yummy snacks and delicious food.

Since I love quick and easy meals that don’t require me to stand in the kitchen while everyone else is having fun together, the Sam's Club Cafe Pizza and Coca-Cola Bundle is the perfect solution. I noticed the bundle the last time Houston and I were at Sam’s Club, picking up our favorite mesquite chicken, and I couldn’t believe what's included for $13.98: a hot 16 inch pizza, cheesy breadsticks, six cookies, and a 2-liter bottle of Coca-Cola. I am all about the quick and easy life so being able to grab an entire party menu at Sam's Club at a great price makes hosting a football watching party a cinch. That means there is more time for party setup and decorating. A girl has to have her priorities, right?

I placed our order when we arrived at Sam's Club and then we did our shopping. A quick stop at the pick-up counter and we were on our way home with our meal.

I thought it would be fun to have a little football game ourselves and Houston created some awesome printables for our Flick Kick Football Game.

I started by making two goal posts out of yellow drinking straws. I cut one long piece for the crossbar and two shorter pieces for the upright arms of the goal post. I lightly dipped the arms into hot glue and attached to the cross bar. Then I added another straw to the bottom as the support pole.

Then I printed the field that Houston created and the foldable football; he was so sweet, he even put gridlines and instructions on the printable for easy folding. Once I had my football folded I grabbed a pen to keep score with the printable scorecard and we got to playing.

Flick Kick Football:


Supplies:

Print out the Flick Kick Printables
Cut out and fold the football graphic
Cut out the printable scorecard
Print the field printable on 11x17 paper

How to Play:

One player on each side of the field printable
Players take turns flicking the football back and forth, trying to keep the football in the opposite end zone
When a touchdown is scored, the player can then attempt a field goal for an extra point (field goals need to be flicked from the table and through the goal post - more details are included on the scorecard)
If a player's football goes too far while trying to score a touchdown and falls off the table, the opposing player can attempt a penalty kick with the same rules as a field goal kick

Trying to flick the football into the end zone is harder than it looks! I kept flicking it too hard and it would fly off the field and almost into the pizza. One I finally scored a touchdown, Houston raised his yellow goal post and I tried to flick the football for a field goal point. I think I better stick to paper crafting and cookie baking because I tried multiple times and never made that extra point.

We had a great time snacking on pizza and playing our flick kick football game. It is going to be a great way to entertain my younger nephews who don’t like watching an entire football game on TV and it is inexpensive entertainment with supplies you probably already have on hand. It has been hot in Southern California; like, woah dang, hold onto your wallets, hot! With temperatures in the hundreds for a week straight, we have been pretty miserable trying to keep cool. Well, with the exception of my office during the day, where I still wear a sweater and keep a blanket on my lap; I swear you could freeze meat in my cubicle.

So meals have been light on the spicy or warm temperature and in are the pasta salads and cool desserts. Now, I love ice cream as much as the next lady, but baked goods are really my jam. Give me a choice of cookies or ice cream and I will always choose the cookie. I also love baking as a way to de-stress from the week/day (let’s be real, sometimes a girl needs a cookie on a Tuesday) and I am a diehard Nestle Toll House chocolate chip girl. Don’t even think about trying to fill my chip jar with another brand of chocolate chips; I will notice and you won’t get a cookie.

I have such wonderful memories of baking desserts with my grandma and mom growing up and they always made sure the dessert was placed on a pretty tray, in a fancy tin with doilies, or on a cake stand as the table centerpiece; maybe that’s where I get my presentation obsession with cake stands.

I felt like stress-eating and baking this weekend after finishing my math homework, can anyone tell me when I will use a logarithm in real life, and went to Target to pick up some baking supplies (and enjoy the free air conditioning). I headed down the baking aisle to pick up my beloved Nestle Toll House chocolate chips (semi-sweet minis, in case you’re wondering) and I noticed a new product on the shelf.

I grabbed a box of the cookie mix and one of the brownies as well, but they also have a brownie or cookie mix with Butterfinger candy inside (yum!). I grabbed a couple more supplies and I headed home to make my weekend treat an ice cream and brownie parfait!

Here are the ingredients you need to make one for yourself:

Ice Cream and Brownie Parfait

NESTLÉ® TOLL HOUSE® Brownies & More Brownie Baking Mix with Semi-Sweet Chocolate Morsels.
Vanilla Ice Cream (softened)
Whipped Cream
Toppings of your choice

Bake your brownies according to the directions on the box
Allow the brownies to cool
Use a circle cookie cutter to cut brownies and place one in each mini trifle bowl
Add a scoop of softened vanilla ice cream to the mini trifle bowl
Add another brownie circle (repeat layers if your dish is bigger than mine)
Top with whipped cream, caramel sauce, a cherry, or whatever topping you would like

I am slightly obsessed with how easy these brownies were to make and will be picking up another box of the Toll House baking mix on my next trip to Target; especially since there is an Ibotta cash back offer right now.
