So, I decided I needed to come up with some football themed snacks and have everyone over for some more family fun before the end of football season. It isn’t every day you can have three generations together, my nephews yelling "take it to the house!" and have everyone cheering at the same time!
One of my favorite things about doing a bar style meal is that everyone can add toppings they want and leave out what they don’t like. I am all about adding avocado to everything, but I know that isn’t for everybody; instead I put small finger bowls on the counter filled with toppings and everyone can take what they would like; an easy way to score with your biggest fans!
While Houston and I were picking up ingredients at Walmart, I decided it would be fun to add some RITZ® Crackers as a topping. The extra saltiness of the crackers was just what my bowl of chili needed and they were perfect for dipping in my chili. Some of my other favorite toppings include: cheese, onions, or avocado!
The recipe for the chili can be made on the stove top in about an hour or in the slow cooker for about 7 hours (whichever is more convenient for you).
Slow Cooker Chili:
Three pounds of ground beef (we like our chili meaty!)
One green bell pepper, diced
One Onion, diced
¼ cup parsley, chopped
4 oz.cans of green chilis (we like 2 cans in our chili)
3 tablespoons chili powder
2 teaspoons cumin
1 teaspoon oregano
1 teaspoon black ground pepper
¼ teaspoon cayenne pepper
46-oz. can tomato juice
28-oz. can diced tomatoes
15-oz. can tomato sauce
16-oz. can kidney beans, drained and rinsed
16-oz. can pinto beans, drained and rinsed
1. Cook the ground beef in a skillet over medium heat. Drain the grease and place in the slow cooker.
2. Add all the ingredients to the slow cooker and stir well.
3. Cook on low heat for 7-8 hours.
4. Serve and garnish with your RITZ® Crackers or topping of choice.
